The 3rd Meat Symposium was held 21 May 1986 at the Meat Science Centre
Animal and Dairy Science Research Institute, Irene

Title: The Basic Behaviour of Meat and Non-meat Proteins in Meat Product Systems

The following papers were presented:

  • Model Meat System: Mr Robin Larmuth, Purina Protein Eruope-Coumbit. The development of a model system for the production of processed meat products demonstrating the functionality and application of the various ingredients essential for the production of these products. 
  • Non-meat Protein Sources and Applications: Mr Rodney Baxter, SA Oil Mills. Continuation of model system principle. Proportions used/suggested for water : non-meat and protein : fat  
  • Overview of the SA Meat Processing Industry and Basic Meat Product Production Methods: Mr Mike Jenkin, Kanhym. Definitions, classifications, and flow diagramme explanations of the manufacture of cured, emulsified, fermented products, etc. 
  • Points of General Interest concerning  Regulatory Aspects: Mr Corrie Nel, Legal Respresentative, Fedfood
